Chili Seared Ahi Tuna with Sesame Flatbread Cracker, Avocado/Wasabi Purée, and Preserved Lime/Ginger Citronette

Tuna
1 lb. fresh ahi tuna
1 tbsp. Spanish paprika
2 tbsp. ancho chili powder
½ tbsp. ground toasted cumin
salt & pepper
Cracker
1 cup flour
¼ cup whole wheat flour
½ tsp. baking powder
1 tsp. salt
1/3 cup water
1 tsp. sesame oil
2 tsp. toasted sesame seeds
Citronette
1 preseeded lime
1 tbsp. candied ginger
¼ cup fresh lime juice
1 cup olive oil
1 tbsp. fresh grated ginger
salt to taste
